Amaranth
Amaranthus spinosus · Amaranthaceae
Leafy green and grain plant traditionally used for anaemia, lactation support and cooling summer nourishment.
Amaranth is a fast-growing herb cultivated both for its nutritious leaves (a staple green across India, where the varieties are called keerai or cheera) and for its tiny protein-rich grain seeds. Ayurvedic literature describes the leafy varieties as light, astringent-sweet and cooling greens that support blood and lactation.
Erect annual herb with reddish-tinged ovate leaves, conspicuous paired spines at leaf axils (in spiny species), small clustered greenish-pink flowers in dense spikes, and abundant tiny black or cream seeds.
